1. Fish-n-lime
Ingredients
6 pieces (fillet) Bhekti Fish
2 lemon
1 tsp white pepper
1/2 tsp Red chilli powder
1 tbsp (powder or paste) Mustard seeds
3 tbsp Gram Flour
1/2 cup cooking oil
To taste Salt
Method
Add lemon juice to the fish fillet. Add salt, pepper, mustard powder and red chilli powder and marinate for 30 minutes. Add besan to the marinated fillet and cover both sides of each fillet well. Heat oil to very hot deep fry. Serve with mayonnaise and salad.
2. Keema Bhuna
Ingredients
1 lb ground beef
1 onion chopped
1 cup water
1 tbsp oil
2 tsp curry powder
1/2 tsp salt
1/2 tsp garlic powder
1 tsp red pepper
1/4 tsp Ginger
1 lg potato cubed
1 medium tomato peeled & chopped
1 cup peas drained
1 cup water
Method:
Brown ground beef and onions. Drain well. Combine next 8 ingredients and add to ground beef mixture. Stir well. Stir in potato, tomato, peas and remaining water. Bring to boil, reduce heat and simmer, covered for 20 to 25 minutes or until potato is tender.
3. Chicken Hari Kabab
Ingredients
6-7 green bananas
2 medium-sized potatoes
1 tsp cumin seeds
1 tsp black pepper powder
2 tbsp mustard oil
1 tsp turmeric powder
Salt to taste
Method
Peel the bananas and the potatoes, and cut them into medium- sized cubes, Heat the oil and add the cumin seeds. Stir for one minute and then add the vegetables. Lower the flame and add the salt and turmeric powder and mix. Add 1/2 a cup of water and cover with a lid and cook till the bananas and potatoes are tender. Add the black pepper and mix well.
4. Bhel Puri
Ingredients
Puffed rice or rice krispies
2 tbsp turmeric powder
1/4 tsp rock salt
1/4 tsp boiled potatoes
Oil 1tsp for making puri
Flour 200 gm
Salt half tsp
Oil half tsp
Oil tbsp
Method
Mix all the ingredients for making puri and fry them in deep oil. Preparation for bhel mix. Heat 1 tsp oil and add rock salt and turmeric powder. Add puffed rice on a very slow fire, roast them for 5 minutes. Add potatoes, onions into the mix. Cook for some time and reduce the heat. Serve puri and vhel with mint chatni.
5. Carrot Potato Fritters
Ingredients:
2 cups cooked carrots
12 quinces prepared instant mashed potatoes(made without fat) or leftover mashed potatoes without fat.
1 cup chopped onion
3 tablespoons ketchup
1 teaspoon dill weed
2 teaspoons vegetable oil
1 garlic clove chopped or crushed
Salt to taste
Method
Mash together the carrots and potatoes in a bowl and set aside. Heat oil in a small skillet and brown the onion and garlic until tender, then add it to the potato/carrot mixture. Stir in the ketchup and dill weed.
6 Chicken Chops
Ingredients:
2 chicken chops
2 tbsp chilli sauce
1 lemon
2 tsp ginger water
Cliantro leaves
1egg
30g bread cumbs
100g oil
Salt to taste
Chicken Chops
Method:
Separate chicken chop from the wing bone. Place the chop on a wooden surface and beat with a spatula or chapatti roller until the chop becomes thin. Place this chop on a tray, apply chilli sauce, ginger water, salt, lemon juice, chopped cilantro and marinate for 1/2 an hour. Beat an egg in a bowl and apply this to the chops with a brush. Also apply the bread crumbs to the chops. Heal oil in a wide pan, fry on all sides until it becomes golden brown. Serve with tomato sauce.
7. Barbecued Orange Chicken
Ingredients
Chicken pieces, bbq sauce oil
1/4 cup orange juice
1/2 cup vinegar
1/4 cup tomato paste
1 orange zest.
Method
Prepare grill in medium bowl, mix together all barbecue ingredients until smooth. Place chicken on grill away from centre heat, skin side down, cook 15 minutes. Turn chicken and grill for 10 additional minutes.Brush chicken pieces with sauce and turn occasionally, cooking for addition at 10 minutes.
8.Prawns Cakes
Ingredients
500g fresh prawns
1 tsp coriander
1 tsp shallots
1 tsp sea salt
Pinch of pepper
3 eggs
2 tbsp self raising flour
40 ml oil
Method
Shell, devein, and cut prawns into pieces.Chop fresh coriander and shallots. Break eggs into a mixing bowl and whisk add flour. mix well and season with salt and pepper. Add the prawn's pieces and stir until evently mixed.Shallow fry table spoons of the omelette mixture until both sides are golden.
9. Chocolate Cake
Ingredients:
1/4 cup Unsweetened Cocoa Powder
1-1/2 cup All-Purpose Flour
1 tbsp vinegar
1 tsp Vanilla
1 cup sugar
1 tsp Baking Soda
1/2 tsp salt
1/3 cup oil
1 cup water
Method:
Mix together all the dry ingredients in a bowl. Mix liquid ingredients in a separate bowl and combine it with dry ingredients.Stir the mixture with a wire whisk until well mixed.Grease an eight-inch baking pan. Pour the prepared mixture into the pan.Bake for about 45 minutes at 350 degree F. Top with ice cream and serve.
10. Pumkin Soup
Ingredients:
2 1/2 c. cooked and mashed pumpkin
3 to 3 1/2c. water
1 tbsp. chopped and sauteed onion
1 tbsp. butter
1 c. milk
1 tbsp. curry powder
Salt to taste
Method
Blend pumpkin and water. Saute onion in butter. Add onion and remaining butter to mixture. Place mixture in saucepan and boil gently for three minutes. Add milk, curry and salt. Heat through, stirring constantly, but do not bring to a boil. Serve hot.
11. Fresh Vegetable Soup
Ingredients
1 can chicken broth
3 T chicken bases
2 quarts water
1/4 tsp pepper
1/8 tsp salt
1 inch chunk ginger
Peeled and crushed
2 bay leaves
8 large cloves garlic
crushed 2 stalks celery, thinly sliced
1/2 baby carrots, thinly sliced
1 leek, thinly sliced
5 mushrooms, thinly sliced
1 scallion, sliced in one-inch pieces
Method
Put everything into a soup pot and simmer gently for 1-2 hours, adding water as needed. This makes a light, refreshing, summer dish or first course Serve it hot.12.Shahi Koftay
Ingredients
Minced meat(finely chopped) 1 kg
Red chili 9 nos
Roasted grams small quantity
Garlic 2 bundle
White cumin 50 grams
Crushed seasoning 3 tola
Green coriander small quantity
Ghee 375 grams
Onion 2 bundles
Ginger 1 small bundle
Tomato 2 nos
Crushed coriander 2 pinch
Poppy seed 1 tola
Green chili small quantity
Yoghurt 250 grams
Method
Chop minced meat finely on the slab. Then add half onion, half ginger, grams and finely chopped the poppy dees, coriander and green chili. Then fry ghee into frying pan and fry balls in it one by one. Now fry the remaining half things into ghee. After that prepare gravy of these remaining ingredients. Add fried balls into this gravy. When the gravy water becomes dry remove it from the fire after adding optimum quantity of gravy in it. Sprinkle crushed seasoning on it and cover the boiler. Uncover it after few minutes now shahi kooftay are ready.
13.CHOCOLATE SHOTS
Ingredients
2 tbsp caster sugar
1 tsp cocoa powder
½ cup skimmed milk
1 ½ cup ice cubes
Chocolate shavings, for garnishing
Method
Put chocolate in a microwaveable bowl and melt on a low setting, for about a minute when still hot, whisk in the sugar and cocoa until the mixture is smoth.
14.Pasta Salad
INGREDIENTS
500gm Penna Pasta
50gm Capsicum
50gm Tomato
50gm Onion
to taste Salt
2 table spoon Olive oil
To taste Salt and Pepper
1 table spoon Lemon juice
Mathod
Boil pasta
Peel onion and cut into slices.Make slices of tomato and capsicum.
Mix all the ingredients together.
Put salt and pepper to taste.
Serve
15.Lemon Barfi
INGREDIENTS
800 gm Khoya, grated
400 gm Sugar
30 gm Gandharaj lemon zest
or regular lemon zest, grated
1 cup Water
METHOD
In a heavy bottom kadhai, heat sugar with water.
Boil the syrup till it reaches a single-thread consistency.
Add khoya and cook on a low flame till semi-dry.
Remove from the flame. Add Gandharaj lemon zest and mix , Cool.
Set in a tray and cut into diamond shaped pieces.

Handmade salted cookies
Ingredients:250gm unsalted butter (cut into small cubes)
2 cups of all purpose flour
1 / 2 cup milk powder
2 tbsp sugar
1 tsp salt
1tsp Black onion seed ( kalojira)
All ingredients have to be in room temperature.
Methods:
Put all the ingredients in food processor. Mix just until they come together.
Now take out the dough from food processor and give a quick kneading with hands.
Cover the dough with foil and put in the freeze for 30 minutes
Preheat your
oven in 180º c.
Make cookies from the dough as your desired shape and bake for 10-15 minutes.
Chicken with Creamy Mushroom Sauce
Ingredients:
1 Chicken cut into 4 pieces
oil or butter,1 Chicken cut into 4 pieces
salt and pepper to season
For Sauce:
3 tablespoons butter
15 medium sized mushrooms sliced
1/4 cup all purpose flour
1/2 teaspoon salt
a pinch of nutmeg
a pinch of pepper
1 cup milk
1 cup chicken broth (can easily find in super market) or you can use chicken stalk at home
1 tea spoon dried herbs
Methods :
Preheat oven to 350 degrees F.
Prepare chicken pieces by washing and patting dry with a paper towel. Rub the chicken breasts with oil or butter, salt and pepper. Arrange chicken in a single layer in a baking or roasting pan.
Bake chicken breasts, uncovered for about 30 minutes. When they are done when they are not pink in the middle. When the chicken breasts are close to being baked, you can start to make the creamy mushroom sauce.
In a large frying pan melt one tablespoon of the butter. Toss in the sliced mushrooms and fry for 7-10 minutes on medium heat. Remove the mushrooms from the pan and set them aside in a bowl until later.
In the now empty frying pan, melt the 2 additional tablespoons of butter. Blend in the flour, salt, nutmeg and pepper. Gradually stir in the milk and chicken broth.
Cook stirring constantly until thickened.
Add the cooked mushrooms and the chopped parsley back to the cream sauce and stir gently.
Heat through, but do not boil.
Remove your chicken breasts from the oven and place on serving dishes.
Pour the creamy mushroom sauce on top and garnish with a little parsley.
This would be delicious with a roasted potato/ stir fried vegetables or rice.
Spiral Beef with Mozzarella stuffing
Ingredients :
Beef steak 4 pcsDark Soya sauce 4 tbsp
Oyster sauce 2 tbsp
Fish sauce 1 tbsp
Bar b Q sauce 2 tbsp
Ginger garlic paste 2 tbsp
Red chili flakes 1 tea sp
Black paper powder 1 tea so
Mozzarella cheese stripes 4 _finger cut
Molasses 1 tbsp
Wheat 4 tbsp
Egg 1 beaten
Bread crumb 1 cup
Methods:
Flat the steak pieces w hammer, marinate w all the ingredients for at least 12 hrs in freeze.
Cut mozzarella in finger shape. Roll the beef fillet by keeping the cheese finger inside. Just like rolls.
Now deep the roll in plain flour, then put in beaten egg, then roll the breadcrumbs over it and shallow fry in a pan or bake in pre heated oven for 20 mins in 160 deg.
